To recreate:  

Create a pivot table in a new sheet using data in the same file.  My table has 5 row fields: year, month, YearMonth, Category, 'regular or discretionary' and one column :data, being the sum of an amount field.

The regular or discretionary field has 4 options, R, D, S and X.  If I filter on YearMonth and then select a regular or discretionary where there is data present, the filtering works correctly, but if I select one where there is no data present for the YearMonth selected, the table 'collapses' and only displays the year and data headings, with one row with a completely empty result.

I have tried Edit - Undo and have tried unhiding rows, but nothing I do will bring back the pivot table to a useable state.  Because the YearMonth and regular or discretionary headings have disappeared, I cannot remove the filtering on them.

I have discovered that if I edit the pivot table to remove the regular or discretionary row this will clear the 'stuck' filter and the data will reappear, then I can put the row back into the table.

I have set the bug's status to 'NEEDINFO'. Please change it back to
'UNCONFIRMED' if the issue is still present

I have made a sanitised copy of my file so you can play with it.  
On the Pivot Table By Category sheet, select YearMonth 20189 then select 'regular or discretionary' S.
The columns will disappear. You can select Edit-Undo and the last filter will be removed, but you will be unable to modify the month, YearMonth or Category filters.
You can select a different year, but then the columns will disappear again.
If you Edit - Undo this will make the columns come back, but the filter arrows will still be disabled. The only way to free them again is to modify the layout and save it, then modify it again to undo your changes.

i can confirm this bug with lo 6.1.2.1:

selecting a non existing value from attached spreadsheet in column 
'regular or discretionary' (e.g. 'S') makes pivot table unusable.

where i cannot confirm the problem:

- select column: year: '2018'
- select column: category: 'C'

- select column: year: 'ALL'
- select column: category: 'ALL'
